BAOBAB – The African 'Miracle-Tree'

Legend has it that the baobab wanted to be more beautiful than any other tree in Africa. Not having accomplished this it was deeply ashamed and buried its head in the soil. The tree almost looks as if stuck in the ground upside down. Its mighty roots reaching up into the sky have been providing refreshing shade to rural villages all over Africa ever since. Baobabs can get over 1000 years old and some of them only carry their first fruit after 100 years - Slow Food at its best!
No fruit holds more fascination for us than the baobab from the legendary and mystical monkey bread tree. As experts for exotic fruits we were excited to see baobab become the new superfruit. Since it was approved within the EU in 2008, we were finally able to add baobab to our wide range of raw materials and are successfully marketing our own branded products like the wow!bab cereal bar. From the early days we have been looking for new ways of utilizing and processing this fruit.
There are many reasons why baobab has become the latest trend currently taking the markets by storm. Not only does it have a pleasant taste, but is packed with nutrients. Africa's best known tree has always had a reputation for being the apothecary or miracle tree.

The baobab fruit's versatility and special properties make it a particularly appealing raw material for drinks, smoothies, desserts, baked goods, sweets, fruit spreads and many more products. The deliciously fruity, slightly tangy taste of the baobab fruit combines extremely well with an extensive range of ingredients, and the pulp's consistency allows for different ways of processing. The prickly fruit, bark, leaves and seeds have been traded at African markets for centuries. All these parts are either used in traditional remedies, as a food source, or for manufacturing cosmetics. Mixed with water the pulverized white pulp turns into a nutritious drink with a pleasant taste. It is even used as a 'milk substitute' for infants and children in Senegal. The baobab leaves are high in protein and can be prepared like vegetables to soothe stomach discomfort. The hazelnut sized seeds can be processed for their oil, used as spice, and are delicious roasted. They are said to alleviate tooth aches, symptoms of heart condition and malaria fevers.
The Baobab tree grows predominantly in the dry African savannah and is a true master of 'water economy/storage'. The fruit ripens during the rainy season, and once the dry season starts the tree draws water from the fruit to retain it in its trunk. Natural ultra-filtration concentrates the active water components. As neither vitamin C nor Tocopherols, both unstable compounds, are affected by this process, they stay fully intact.
The natural fruit powder - the pulp - is dry with less than 10% water content and is a valuable source of vitamin C. Its anti-inflammatory, pre-biotic and viscosity-increasing properties as well as minerals, high content of dietary fibers and calcium represent a remarkable resource for food products and additives as well as natural cosmetics.

The agricultural use of baobab also helps slow down the ongoing desertification of the dry savannah.
